Eventueel peren uit blik maar dan minder suiker gebruiken.\t<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Stap 2\">\n<div class=\"cooked-dir-content\">\n<p>De gelatine laten weken in koud water.\t<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Stap 3\">\n<div class=\"cooked-dir-content\">\n<p>De peren ontdoen van steel en klokhuis, afwegen en mixen.\t<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Stap 4\">\n<div class=\"cooked-dir-content\">\n<p>Slagroom met 14gr. suiker half opkloppen en in de koeling plaatsen.\t<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Stap 5\">\n<div class=\"cooked-dir-content\">\n<p>Scheid de dooiers van de eiwitten en doe ze in een ruime pot, voeg 1.5dl. perensiroop en de overige suiker toe.\t<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Stap 6\">\n<div class=\"cooked-dir-content\">\n<p>Op een laag vuurtje (of au bain-marie) opkloppen tot een luchtige sabayon, gelatine uitknijpen, smelten en druppelsgewijs onder de sabayon roeren.\t<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Stap 7\">\n<div class=\"cooked-dir-content\">\n<p>Laat de sabayon wat afkoelen en spatel deze onder de puree van peer.\t<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Stap 8\">\n<div class=\"cooked-dir-content\">\n<p>Spatel met een klopper deze massa onder de slagroom en doe in potjes.\t<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Stap 9\">\n<div class=\"cooked-dir-content\">\n<p>Laat opstijven in de koelkast.\t<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Stap 10\">\n<div class=\"cooked-dir-content\">\n<p>Warm een \u00bd dl. perensap op (van 1,3dl. siroop).\t<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Stap 11\">\n<div class=\"cooked-dir-content\">\n<p>Week 3\/4 blaadje gelatine gedurende <span class=\"cooked-timer\"><a data-timer-id=\"5d69f24d8e3457822bb6ca43d6070dc0_1\" data-seconds=\"0\" data-desc=\"10 minuten\"><i class=\"cooked-icon cooked-icon-clock\"><\/i> 10 minuten<\/a><\/span> in koud water, uitknijpen en laat smelten in het opgewarmde perensap.\t<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Stap 12\">\n<div class=\"cooked-dir-content\">\n<p>Roer onder het koude perensap en schenk bovenop de perenmousse een kleine hoeveelheid (even het potje rond draaien zodat het mooi verdeeld is).
